Courgette, Carrot and Almond Cake ✨


✨400g all purpose flour
✨ 35g ground almonds
✨ 1 tsp baking powder
✨ 1/4 tsp salt
✨ 1 1/2 tbsp cinnamon 
✨ 1/2 tsp ground ginger
✨ 1/4 tsp nutmeg
✨ 90g carrots, shredded
✨ 90g courgette, shredded
✨ 95g coconut, shredded 
✨ 4 eggs
✨ 175ml maple syrup
✨ 2 tsp vanilla extract
✨ 80ml oil (coconut, vegetable)
✨ 60ml almond milk

✨ 225g cream cheese
✨ 1 tsp vanilla extract
✨ 5 tbsp maple syrup


✨ Heat oven to 175 degrees C and grease the cake tins
✨ Combine all the dry ingredients (flour, baking soda, cinnamon, ginger, nutmeg, and salt)
✨ In a separate bowl, beat the eggs, maple syrup, vanilla extract, oil, and almond milk with a hand mixer
✨ Combine dry ingredients and wet ingredients and beat until cake batter forms
✨ Fold in the carrot, courgette and coconut
✨ Divide cake batter into the prepared tins
✨ Bake for 25-30 minutes, remove from oven and let the cakes cool for approx 30 minutes
✨ Whisk the cream cheese, maple syrup and vanilla extract together and spread over the cake with a spatula
