comin’ at you with some walnut banana cake bars topped with honey cream cheese frosting ?? i’m the type that buys extra bananas every week just to ripen them for recipes like this! there’s just something about the smell of banana bread or cake fresh out the oven. it smells SO GOOOOD! these cake bars are topped with a simple 5-ingredient honey cream cheese frosting which is a necessity in my opinion ?

ingredients: makes 16 bars
3 extra-ripe bananas
2 eggs
2 tbsp coconut oil, melted
1/4 cup maple syrup
1/2 tsp vanilla extract
1 3/4 cup almond flour
1/4 cup coconut flour
1 tsp baking soda
1/8 tsp sea salt
1/2 cup crushed walnuts, and more for topping

honey cream cheese frosting:
8 oz vegan cream cheese
2 tbsp coconut oil, melted
1/4 cup honey (maple syrup if vegan)
1 tsp vanilla extract
1 tsp almond milk

1. preheat oven to 350F. prepare a 8 x 8 baking tray with parchment paper.
2. in a large bowl, mash bananas and add in eggs, coconut oil, maple syrup and vanilla extract.
3. add in almond flour, coconut flour, baking soda and sea salt. slowly fold in crushed walnuts.
4. transfer to baking sheet and bake for 28-30 minutes or until toothpick inserted in center comes out clean.
5. allow to cool for at least 10 minutes. while cooling, mix together frosting ingredients. spread on top of bars, sprinkle with more crushed walnuts and cut into 16 pieces. enjoy! ?
