So simple, yet so delicious, coconut rice really goes well with anything and it’s so easy to make. Here’s how I made it: if you try it, let me know ?

INGREDIENTS for the rice:
250 gr originario rice (or other short grain rice)
330 ml cold water
4-5 tbsp light coconut milk (canned)
Salt to taste

INGREDIENTS for the veggie side:
Broccoli florets (or other veggies)
Soy sauce to taste
Olive oil
1 garlic clove, chopped
1 tsp of fresh ginger, chopped

INSTRUCTIONS:
Wash 250 gr of rice with cold water, stirring with your hand. Drain and repeat until water runs clear, then soak it in cold water for 15-30 minutes before draining it again. Soaking allows the rice to absorb water right to the centre of each grain for even cooking.
Place the rice in a pot, add 330ml of cold water, a pinch of salt and bring to the boil. Then simmer over a low heat for 10 minutes with the lid on. Turn off the heat and leave to stand for 10 more minutes still with the lid on. After this time, remove the lid, add about 4-5 tbsp of coconut milk and stir well, leaving it to rest for a little longer.
Meanwhile prepare your preferred veggies by simply stir-frying them for few minutes with olive oil, soy sauce and the chopped ginger and garlic.
You can serve the rice in a bowl or, as I did, in a dish with the veggies. Garnish with fresh parsley and sesame seeds.
