Coconut Lime Rice with Grilled Tilapia ⠀

Coconut Lime Rice:⠀
INGREDIENTS⠀⠀⠀
2 Cups Coconut Milk ⠀
1 Cup Basmati Rice ⠀
Zest of 1 lime⠀
Juice of 1/2 lime⠀

METHOD⠀
– Cook rice with coconut milk instead of water⠀
– When done, add zest and lime juice⠀
– Sit for 5 minutes⠀

Grilled Tilapia: ⠀⠀⠀
INGREDIENTS⠀⠀⠀
1 1/2 tbsp olive oil⁠⠀⠀⠀
1 tsp ground smoked paprika⁠⠀⠀⠀
1/2 tsp garlic powder⁠⠀⠀⠀
1/4 tsp salt⁠⠀⠀⠀
1/4 tsp freshly ground black pepper⁠⠀⠀⠀
2 tilapia fillets (frozen aisle of @costco) ⁠⠀⠀⠀
⁠⠀⠀⠀
METHOD ⁠⠀⠀⠀
– Thaw tilapia (on the counter about an hour) ⁠⠀⠀⠀
– Pat dry with paper towel ⁠⠀⠀⠀
– Mix all ingredients except tilapia⁠⠀⠀⠀
– Top tilapia with olive oil & spice mix⁠⠀⠀⠀
– Heat grill (and cast iron) over medium- high heat. You need it hot to get the delicious crispy bits that taste deep fried!⁠⠀⠀⠀
– Grill the fish for about 4-5 minutes a side. We prefer our fish a little on the well done side so I aim for 5-6 minutes. ⁠⠀⠀⠀
