Cinnamon Oat Baked Apples

Vegan & Gluten-free

Ingredients
5 tablespoons plant butter, softened
1/2 cup packed brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 cup oats
4 large fuji apples
3/4 cup water, warm
Coconut whip cream, for topping
Cinnamon, for topping

Instructions
Step 1: Preheat oven to 375 degrees.
Step 2: Mash together butter, brown sugar, cinnamon and nutmeg. Stir in oats.
Step 3: Use a melon baller to scoop out the core of each apple. Remove a little more than 3/4 of the way down the apple center. Fill each apple with oat mixture.
Step 4: Place filled apples in a glass baking dish. Pour warm water into the pan around the apples. Bake for 40-50 minutes or until the apples have softened.
Step 5: Serve warm and top with coconut whip cream & a sprinkle of cinnamon. Enjoy!
