Cilantro Garlic Black Eye Peas. This dish is full of nutrients and protein. It’s a great option for vegans!

INGREDIENTS:
2 Cups dry black eye peas
2 Tbsp fresh lemon juice
5 Cups vegetable broth
3 cups water
5 Cloves of garlic, mashed
1/4 Cup cilantro, finely chopped
Sea salt and pepper

INSTRUCTIONS:
1. In a large bowl add beans and enough water to cover. Let them soak overnight. 
2. Drain beans and rinse under cold water.
3. Place beans in a large pot. Add vegetable stock and water. Simmer covered for about an hour until they are tender.
4. Stir in cilantro, garlic and lemon juice. Simmer another 10 minutes. Season with salt and pepper.
