Choley Bhature = Pure Loveđź’•
1. Knead the dough with the above mentioned ingredients, smear some oil and cover it with a cling wrap. Keep it aside for 1-2hrs.
2. Meanwhile boil the chickpeas with black cardamon, cinnamon, cloves & tea decoction.
3. CHOLEY WITH ONIONS & TOMATOES – In a pan, put some oil & sprinkle 1/2 tsp of cumin seeds and let them splutter. Add finely chopped onions and fry until they turn brown. At this moment, add the pureed tomatoes(with ginger & green chillies) and cook it until the oil separates from the masala in the pan. Now add chilly powder, coriander powder, amchur powder(dry mango powder) or anardana powder(dry pomegranate seed), salt & cook it for another 3-4minutes. Now add the boiled chole(chickpeas), ginger juliennes, slit green chillies to the masala and cook it on a medium heat for another 5-7minutes.
4. CHOLEY WITHOUT ONIONS & TOMATOES- Take boiled choley (chickpeas) in a bowl. Add chana masala, amchur powder(dry mango powder), ginger juliennes & slit green chillies. Add sizzling hot oil to it and cover it for few minutes so that the aroma of the masalas is nicely absorbed by the choley(chickpeas). Now transfer the choley to a pan and cook it for another 3-4minutes.
5. Serve the choley(chickpeas) with piping hot bhaturas, sliced onions, green chillies & pickle. .
