🥳Chickpea Peanut Butter Bars🥳
I saw this recipe from @alyssakeyte the other day and I was so intrigued. The main ingredients in these bars are 𝐜𝐡𝐢𝐜𝐤𝐩𝐞𝐚𝐬 and 𝐩𝐞𝐚𝐧𝐮𝐭 𝐛𝐮𝐭𝐭𝐞𝐫, which means they’re full of healthy fiber, protein, and fat.
The 𝐚𝐥𝐦𝐨𝐧𝐝 𝐟𝐥𝐨𝐮𝐫 also adds some extra protein, making this a great recipe for an on-the-go snack!
Best part: just 1-2 squares really fills me up and satisfies that urge to snack on empty calories. 🙌🏼
I’ll post Alyssa’s recipe here in case you’d like to try it for yourself! ♥️♥️♥️
• 1 15 oz can of chickpeas (drained)
• 1/3 cup peanut butter (or any nut butter)
• 2 tbsp maple syrup
• 2 tbsp coconut sugar
• 1/4 cup almond flour
• 2 tbsp almond milk
• 1 tsp vanilla
• 1/4 tsp salt
• 1/4 tsp baking powder
• 1/4 tsp baking soda
• mix all ingredients in food processor until smooth (1-2 min, scrape sides once)
• line an 8×8 pan with parchment paper, top with sprinkles, and bake at 350F for 25-27 min. Let them cool for 30 min (this is an important step!). Store in fridge.
