CARDAMOM & TAHINI LOAF CAKE
I think tahini is def one of my favorite ingredients. I eat it in my yoghurt, as a salad dressing, as a topping over a bowl or in a cake. This cake was such an eye-opener for me. I remember the first time I ate it. It was at a coffee shop in Utrecht, @karibucafenl . I was guessing what the ingredients were, and then created this recipe.
I am not really a sweet tooth honestly, but this cake is has some sort of twist to it. The cardamom gives it an extra dimension and a complex flavor. Love it. Because you use greek yoghurt (or quark), it is a bit lighter than your usual cake, but I wouldn’t say it is completely healthy, as it has oil and sugar in it, too. For a fresh touch, add a little lemon zest.
