Can’t have piping hot roadside vada pav this lockdown? Make it at home with this very easy recipe and enjoy… Ingredients:
Potato (boiled) – 4 medium sized
Green chilles -4
Ginger – 1 inch piece
Garlic – 4- 5 cloved
Turmeric pwd – 1/4 tsp
Salt – to taste
Oil – 2 tblsp
Mustard seeds – 1 tsp
Curry leaves – 8-10 pcs
Gram flour(besan) – 6-7 tblsp
Water – 1/2 cup
Oil – to fry
In a blender add Coriander leaves, green chilles, ginger, garlic and little water and make a coarse paste. Keep aside
Take a pan, add oil and heat it. Once the oil is hot enough add mustard seeds when it sputter add curry leaves and green masala paste. mix well. Than add turmeric powder and mix it till the raw smell goes.
Add boiled mashed potatoes and salt. Mix it well than add chopped coriander leaves. Switchoff the stove and let the mixture cool.
Once the mixture is cool make small balls from it. In a bowl add gram flour, salt, pinch of turmeric pwd and water little by little and make a paste thick enough to cover the potato balls.
In a frying pan add oil to deep fry. Once the oil is hot enough drop the potato balls and fry till the vada’s are cooked. Remove it on a paper towel. Serve hot with lasun chutney, fried chillies and pav.
