Basil and Chicken Fried Rice

3 chicken breasts cut into thin pieces marinated with 1 tbsp ginger garlic paste, salt and pepper powder, 1 tbsp fish sauce
3 cups cooked basmati rice
6 Thai bird chillies
8-10 pods of garlic
1 inch ginger chopped finely
1 onion sliced into half moon
1 green bell pepper cut into small slices
1/2 cup broccoli florets
6-7 spring onion greens
1 tbsp soy sauce
1/4 cup oyster sauce
1 tbsp fish sauce
1 tsp sugar
1 cup basil leaves
Salt as per taste
3 tbsp cooking oil

Marinate the chicken as mentioned above and let it rest an hour. In a separate bowl add soy sauce, fish sauce, oyster sauce and sugar. Mix well and set this aside. Take thai bird chillies and 6 pods of garlic cloves and grind using a mortar and pestle. Let it remain coarse. In a wok heat some cooking oil. Once hot, add the chopped garlic along with 4 pods of chopped garlic. Sauté a min until the raw smell disappears. Now add the onions and sauté a min. Then add the chicken and let it cook, stirring intermittently. This should take around 5-6 min. Now add the bell pepper and broccoli and give it a good mix. Then add the cooked rice and the sauces mix. Stir fry the rice on high flame. Toss everything well. Check the salt and add if required. Lastly add the basil leaves and mix everything well. Serve this hot, while topping it with a fried egg. Sprinkle some paprika if you like, on the fried egg. Garnish with spring onion greens and Thai bird chillies and serve some julienned cucumber alongside.
