BANANA BREAD PANCAKES WITH CARAMELISED PEACHES & COTTAGE CHEESE 😍

SWIPE FOR UPCLOSE 😍➡️ Happy Saturday, everybody! What do you plan to make for breakfast or brunch this weekend? I have for you these super quick and easy banana pancakes 😍🥞🍌 Definitely one of my favourite meals ever!

🛒 You’ll need:
– 1 ripe banana (mashed)
– 1 egg/1 flax egg
– 2 tablespoons flour (I used wholegrain flour)
– pinch of baking powder
– peach slices and cottage cheese (or dairy free cream cheese) for the toppings

🍽 Preparation:
First you’ll have to prepare the pancake batter. Mash the banana with a fork, beat the egg and mix all of the ingredients except for the garnishes. Heat a non-stick pan and using a spoon pour the batter to form pancakes (you can add tiny amount of coconut oil if you want to fry them). Bake each side for 1 minute until they turn golden-brown. After making the stack of pancakes, add the peach slices with just a tiny bit of oil and brown sugar (optional) to the pan and caramelise on both sides. Plate the pancakes and garnish with the cheese and peaches 😍 I’m obsessed! Such a lovely breakfast in no time! 😋 I hope you enjoy and share with me if you make it this weekend 🤗
