Air Fried Fish Sauce Chicken Wings Tower!
2lbs chicken wings cut at the joint
1 tsp fish sauce
½ tsp salt
½ tsp black pepper
1 tbsp garlic powder
½ cup potato starch or corn starch
½ cup sweet potato starch
8 garlic cloves minced
3 tbsp lime juice
3 tbsp sugar
2 tbsp fish sauce
1 large red chilli chopped
3 tbsp olive oil
1 tbsp chopped cilantro
½ orange, or apple or pear etc
In a large mixing bowl add the eggs, garlic powder, salt, pepper, fish sauce and whisk together.
Add the chicken wings and mix until piece is covered in the marinade. Set aside for at least 30 minutes.
Add corn starch and sweet potato starch to a clear plastic bag, shake until they are mixed through.
Put 2-3 pieces of chicken wings into the battee mixture and lightly shake until the pieces are fully coated. Shake off any excess and set on greased baking pan. Repeat for the rest of the chicken.
Brush the wings with a thin coat of olive oil. Set your Air Fryer to 200C and cook for 8 min. Flip brush with olive oil and cook for 5 minutes.
In a bowl add sugar, fish sauce, lime juice and chilli peppers. Mix until sugar has fully dissolved.
In a pot add the olive oil and on medium heat toast the minced garlic until they are golden brown.
Add the fish sauce mixture to the pot and cook for 1 minute, at the very end add the chopped cilantro.
Pour the fish sauce over the wings and toss until every piece is coated.
Carefully skewer chicken wings until it forms a tower. Multiple skewers will be required other wise it will tip over. Use the ½ orange as the base, then garnish with green onion, red chilli then serve immediately.
