30 MIN DISH: BREAKFAST☀️

HUEVOS RANCHEROS =MEXICAN EGGS🇲🇽

So, I am trying to teach the boys cooking.. 😁 plus we love a family breakfast together when we can. Number one loves his spice so this dish seemed to tick all the boxes… This is our version with cheats

INGREDIENTS

1tbsp vegetable oil
1 handful of frozen chopped onions
1 handful of frozen slced peppers
1 cube frozen garlic paste
1/2-1 tsp chilli flakes
400g can chopped tomatoes
2 eggs
Handful of fresh chopped coriander or 1 tsp dried coriander
400g can black eyed beans
Salt to taste
2 warm tortillas or fresh white crusty baguette

METHOD

1.Preheat the oven fan 190 or grill medium.

2.Heat the oil in a frying pan and add the onion, pepper, garlic and herbs. Cook gently for about 5 mins until everything is soft.
3.Add the tomatoes, beans and chilli and cook gently until toms are soft and reduced. .
4.In the mixture make 2 circular hollows
Break an egg into each hollow and cook for about 5 min on a low heat.
5.Put into oven, top shelf and bake for 10 min or grill for 5 min.
6.Eat fresh with warmed tortilla or crusty white bread.
