[recipes] it’s a cooling night again, great to enjoy a pot of hearty soup plus our favouite dishes

最喜欢下雨天来碗热腾腾的鸡汤😋再搭配一两道家常菜,真是满足🥰

Tonight’s Menu
🍗𝗚𝗮𝗿𝗹𝗶𝗰𝗸𝘆 𝗖𝗵𝗶𝗰𝗸𝗲𝗻; versatile dish that you can whipped up different version with adding of potato, firm beancurd, oyster sauce or sweet soy sauce etc
.
Ingredients
350g chicken mid-joints, halved
1 medium potato, sliced 0.5cm thick
5 cloves garlic, sliced
1 tbsp sweet soy sauce
1 tbsp oyster sauce
1 stalk spring onion, cut into sections
.
2 tbsp cooking wine/glutinous rice wine
1 tbsp oyster sauce
1 tbsp fresh ginger juice
1 tsp light soy sauce
1 tsp sesame oil
freshly ground black pepper
.
Method
1. Marinate chicken mid-joints for at least 30 minutes or over night in the chiller (thaw 15 mins)
2. Heat up 2 tbsp of oil and sauté sliced garlic till golden browned; set aside
3. Next sauté potato with pinch of salt till browned and cooked through
4. In the same wok add in chicken mid-joint (mixed with 1/2 tbsp cornstarch before cooking) cook on 2 minutes on each side till charred
5. Lastly stir in potato, spring onion and season with oyster & sweet soy sauce to taste
6. Garnish with fried garlic & serve

🦐𝗦𝘁𝗶𝗿-𝗳𝗿𝘆 𝗔𝘀𝘀𝗼𝗿𝘁𝗲𝗱 𝗩𝗲𝗴𝗴𝗶𝗲𝘀 with
– 4 celery sticks, peel & sliced 2cm thick
– 5 Swiss browned mushroom, quarter
– 6 medium prawns, shell removed
– some sliced carrot & yellow pepper
.
1. Sauté minced garlic & prawn till aromatic, remove prawn when changes colour
2. Next add in carrot & mushroom, cook for 2 mins
3. Stir in celery, bell pepper & prawn then season with salt or oyster sauce
4. Lastly add some cornstarch water, cook for a minute then remove to serving plate
.

🍲𝗛𝘂𝗶𝘀𝗵𝗮𝗻 & 𝗣𝗲𝗮𝗿𝗹 𝗕𝗲𝗮𝗻 𝗖𝗵𝗶𝗰𝗸𝗲𝗻 𝗦𝗼𝘂𝗽; one of my boy favorite chicken soup with nature sweetness & flavour from the ingredients
.
Ingredients
2 chicken legs with thigh
200g huai shan
1/3 – 1/2 cup of pearl beans
1/2 sweetcorn, cut into sections
1 small carrot, cut into chunk
5 red dates
1 tbsp wolfberries
1.2L hot water

Method
1. Trim, clean and blanch chicken legs then rinse and set aside
2. Bring water to boil, add in all ingredients & simmer for an hour
